Avocado Toast (Or: Economists hate this simple recipe that brings Millennials joy)

The hubbub over the devastating economic impact of avocado toast for prospective millennial homeowners might be several years old, but the wonder that is avocado toast lives on.

It’s kind of healthy, involves the most versatile fruit on the planet, and every time you eat it, a millionaire real estate developer who’s probably responsible for incalculable misery throws up and doesn’t know why. What’s not to like?

Obviously, avocados can be expensive – to buy them individually can be over $1 a piece. Buying them in bags of 4 cuts down on the price per piece, but then you’ve absolutely committed to that level of avocado consumption or you will feel nothing but shame. If they’re out of your budget, no one’s judging, and I expect to be invited to your housewarming party in the home that you will own soon.

I made the below recipe today for lunch and it was delicious. The secret ingredient? Disappointment. Because once I mashed the avocado, I checked my eggs and…they were bad.

My despair was palpable. I was in the middle of an at-home workday and needed to take a break to eat, and the eggs were bad!

The solution? Rob left our home and bought a half dozen eggs at the grocery store. Relevant:

With fresh eggs acquired, I could do whatever I want. I was unstoppable. I was a living god!

I used my newfound power to make a nicely seasoned, filling-but-not-too-filling avocado toast with Southwest-type seasonings.

Avocado Toast with Egg

Avocado Toast with Egg

Cook Time: 7 minutes
Total Time: 7 minutes

Eat the rich. Or this avocado toast. Whichever.

Ingredients

  • 1 ripe avocado
  • 1 slice of bread of your choice
  • 1 egg, large or jumbo
  • Smoked paprika, to taste
  • Cumin, to taste
  • Salt, to taste
  • Pepper, to taste
  • 1 pat of butter, for egg frying

Instructions

  1. Use a sharp knife to cut the avocado around the circumference and remove the pit. (Here’s a tutorial on how to cut open an avocado.)
  2. Scoop out the avocado pulp into a bowl.
  3. Sprinkle with smoked paprika, cumin, salt and pepper to taste. Mix well, tasting frequently to make sure everything is going okay. Remember: better to put not enough at first than overseason the avocado from the beginning. You can always add more seasoning, but you can’t take it out!
  4. Put your bread in the toaster but don’t start it yet.
  5. Melt butter in a pan over medium high heat.
  6. Once the butter is hot (but not browned), crack the egg directly into the pan and start the toaster.
  7. Fry the egg to your desired doneness, flipping it (if you can) when the bottom of the whites are cooked.
  8. When the toast is done, spread the avocado mash onto it.
  9. The egg should be just about done! Once it’s finished to desired doneness, place the egg on top of the avocado.
  10. Sprinkle with cheese if desired.
  11. Enjoy and feel like the picture of health and wellness. Briefly consider taking a Pilates class. Have potato chips instead.

Notes

I make these with over-easy eggs but you can make them however you want. I really enjoy breaking the yolk and having the yolk run into the grooves of the avocado mash!
